Who says tacos can’t be healthy?
I feel way less guilt (and full) after eating a few of these! All of the delicious taco flavors are still intertwined in a healthier version of traditional ground beef tacos. Plus, use my trick to avoid dry ground turkey!
Pico de Gallo
Make this first so it can sit in the refrigerator for a bit, it lets the lime mix with the onion and cilantro. This step really gets the flavors to combine!
Dice the tomatoes, onion, and finely chop the cilantro. Slice the limes in halves, long ways. I cry like a baby every time I cut up an onion, so lately I’ve been buying the onions that are already diced in a container. It’s a little more expensive, but worth it to me! Cilantro is best to get fresh. You can save the rest for another meal by cutting off the tips and placing it in a cup of water in the fridge.
Add fresh lime juice, salt, pepper, garlic powder, and mix it all together. Set aside in the refrigerator while you prep the rest. Pico de Gallo is that simple.
Ground Turkey
I didn’t realize at first that turkey cooks differently than ground beef, because it’s not as greasy. Drizzle a little olive oil on a large size pan and turn it up to medium/high heat. Place the ground turkey on the pan (no seasonings yet) and with a spatula, break up the meat into smaller chunks. Continue to flip and fold in the turkey until it’s all tiny pieces. You want the heat up enough to brown most of the meat, then lower it to medium temperature.
Add 1 cup of water to the ground turkey. This is what prevents the turkey from drying out! Let it cook over medium heat, and when most of the water is absorbed, mix in the packet of taco seasoning.
So now you have it all done and can start assembling tacos! I like to warm the tortillas on a pan (no oil), but you can also use the microwave for this step.
Your toppings and sauce for the tacos depend on your preference, I am a big fan of hass avocados. Make cuts with a knife and then use a spoon to scoop it out. I am also obsessed with chipotle and buffalo sauce, but you can use any low carb sauce or creamy ranch. Make these tacos your own after you layer the ground turkey and Pico de Gallo!

- In a bowl, make the Pico de Gallo topping by combining diced tomatoes, onions, and finely chopped cilantro. Add salt, pepper, garlic powder, and fresh lime juice. Stir and set aside in the refrigerator.
- Over medium-high heat, brown the ground turkey in olive oil, continuously mixing and breaking it up into small pieces. Add 1 cup of water, and once absorbed, add 1 packet of taco seasoning.
- Warm the tortillas and build your tacos, first placing the ground turkey, then Pico de Gallo.
- Add toppings and a sauce of your choosing, such as avocados, corn, chipotle, ranch, etc. Enjoy!

- Sub avocados for corn
- Add shredded Mexican cheese if you’d like!
